Nothing like making handmade pasta midday for a fresh and delicious lunch. Pici (pronounced similarly to "peachy") are long hand-rolled strands of fat spaghetti...rustic and irregular in shape. The imperfection of it makes it fun to make and to eat. The recipe for this dough is courtesy of @pastagrannies...a
great account to follow for traditional and authentic Italian recipes.
I know a few posts back I said to make all sauces fresh, bit I'm walking that back a bit. I did use jar pasta for this (vodka sauce), but it was delicious! I let myself pay a little extra to try a new brand, and you definitely get what you pay for in jar pasta at the store. This one really tasted like it was homemade. That said, I did also fry some fresh garlic in olive oil, then added the sauce and some fresh basil...so even if you use (good) jar pasta, dress it up to make it from you. Just don't do Prego, unless you're going for that childhood nostalgia taste. But then again, don't make that the the childhood your kids remember.
Pro Tip: maybe don't add pasta sauce directly to super hot oil in a shallow frying pan right over an open flame and create 4 foot fire columns to the ceiling... Just a random thought of consideration.
