For dinner tonight, I made taco fries in honor of Taco Wednesday. The recipe is by @marleyficalora
It all started with skinning and slicing a sweet potato into fries, seasoning with salt and pepper, and putting it in the air fryer. I made a salsa using onions, tomato, jalepeño, lime juice, and salt. I also made guacamole using an avocado, onions, jalepeño, lime juice, and salt. On the stove I made mashed beans using great northern beans, salt, pepper, and cumin. This meal would not be complete without Chipotle sauce. I used soaked cashewsand mixed them witj garlic, agave, chipotle powder, and salt. Each of these components taste incredible on theie own, but when you put them together it's sensational. The fireworks go off and it's a pleasure to experience. For dessert, I made my old favorite, a chocolate chip mug cake. I used 4 TBSP of gluten free flour, 3 TBSP of blue agave, 1 TBSP of cocoa powder, 1 tsp of baking powder, 1/4 cup of almond milk, and 1/4 cup of non dairy chocolate chips. I mixed it all together in a mug, microwaved for 2 minutes, and then spend 5 minutes heaven😇. This was a perfect Tuesday.
