Pho ‘kind of’ Delicious Soup!! 💚
I love ALL Asian fusion flavours; lime, ginger, garlic, chilli, coriander etc..it’s probably my favourite cuisine if I had to choose!
This is a great one to use up any leftover veg in the fridge as anything would work well, and/or add chicken/prawns/ fish if you fancy,
1 large onion, finely sliced
1 thumb size ginger, grated
2 garlic gloves, crushed
1 tbsp fish sauce
1 tbsp Tamari /soya sauce
1 red chilli, deseeded and sliced
2 whole cloves
1 star anise
Pinch of ground cinnamon
Juice of one lime
1 litre veg stock
Add all of this to a deep pan and let it simmer for about 20 min to infuse all the flavours. Strain the broth and taste for flavour, season and add more soya/lemon or whatever you prefer. Add your vegetables, take into account any that would take longer to tender such as carrots ..but still keep them crunchy so I usually just let them simmer for around 5 min.
Serve with bowls of finely chopped spring onions, radishes, sliced chilli, cashew nuts, coriander & mint. YUM!!!
