The most deliciously healing bowl of goodness I have ever had. Spencer and I whipped it up in like a half hour hahaha it’s so damn good though!
So I started out by generously salt and peppering chicken tenders and cooking them in a little olive oil, then I removed them and dropped on some baby mushrooms- they have a lot of moisture so I let that cook off a bit, then added a chopped leak, some chopped baby carrots, a ton of garlic, about half of a white onion, lots of fresh rosemary and thyme, a little dry oregano and a little red pepper flakes. Let those sweat a bit and then add (homemade, which I think was key here) chicken stock, brought it up to a boil and then turned it down a bit, chopped the chicken and put them back in to let all the flavors marry. And voila the easiest, but mos delicious bowl of chicken soup! Oh and then I added white northern beans to mine because I love them 😁
