Urud wada and green coconut chutney recipe .
2 cups of urud dhal (soaked over night in water)
Salt 1 tsp or less to taste
1/2 tsp turmeric
Your favourite filling (mine is either green chilli or pickled red chilli, 1 medium sized onion finely chopped and curry leaves finely chopped)
1/4 cup of water
Oil to fry (any oil coconut, canola sunflower would do)
Drain and blend the urud dhal with 1/4 cup of water gradually added. Add finely blended urud dhal to a large bowl, add salt, turmeric and your favourite things and mix. Heat the oil. Add a thin layer of room temp oil to a baking paper or your palm, add a dollop of batter, with the help of little bit of water make a hole in the middle of the dollop, drop the wada into the hot oil carefully. Fry both sides until golden brown in medium high heat. Take the wada out and keep on paper towels!
Green chutney .
Add 1 cup of coconut (if using dedicated coconut ad 1/4 cup of coconut milk)
Roasted split chick pea
1/2 cup of yogurt
1/2 tsp salt
1 tbsp tamarind
3-4 small green chillies
1/2 cup of coriander
1 tsp ginger paste
Blend all together and you’ll have your green chutney! You can temper this with some oil, red chilli, mustard seeds and curry leaves as well. But with this wada I like the non-tempered version.
