Sheet Pan Tacos for #meatlessmonday
🌮 Easy 25 minute dinner over here tonight 👌🏻 I love sheet pan fajitas so making these with chickpeas vs chicken really wasn’t too different! Just adjusted the cooking time basically. The chickpeas add a nice crunch to the tacos but don’t really capture the meat texture in anyway. Still we both enjoyed it! -
It’s been nice to realize you don’t have to have a meat at dinner for it to be a full meal. This meal was delicious, filling, and didn’t need a meat substitute. Eating whole foods with yummy spices + toppings is as simple as it gets 😄 Hope you all have a great Monday! -
Preheated oven to 425F
Cut up my veggies first.
I used 2 peppers, 1 onion, and 1 sweet potato.
Added them to a bowl and coated with 2 tbsp olive oil + 1 tbsp garlic powder + 1 tsp of onion powder + 1 tsp chili powder + sprinkled some chipotle powder + salt.
Added the veggies to 1/2 a greased baking sheet.
Used the same bowl and added 1 15 ounce can of chickpeas that I rinsed and patted dry.
Added 1 tsp olive oil + sprinkled more chipotle powder, chili powder, and salt on top.
I used a tsp of chili powder and eyeballed the salt and chipotle powder.
Mixed that together and added the chickpeas to the other side.
Baked for 20 minutes.
Removed and added @sietefoods
taco shells on them. Baked for 4 more minutes.
Served with cilantro, avocado, and @aldiusa
